Grandma’s Mashed Potato Salad

One of my favorite things growing up, was every summer when we would go visit my mother’s side of our family. They lived in the country several sates away, so just the road trip was something to look forward to. One of my biggest memories of those trips food wise, was how my grandmother would take left over mashed potatoes and make potato salad. It didn’t hurt that potato salad then and now is one of my favorite things ! This recipe is as close to her original as I can remember, and is well worth you trying.
