Strange Ingredients that are Not that Strange at All.
Some ingredients my look like they come from another planet. Some may have names that don’t ring a bell with you at all. However you may be surprised how many of them come from very familiar sources. They may in fact not be that far from what you know at all.

How do you figure out how much to use if you’re using dried vs fresh?

It depends on how much heat you are looking for. I would start with half as much of the dry peppers compared to fresh. More if your are combining with a cooling ingredient such as mayo as mentioned in the article. If you are using other “heat” ingredients you may want to use a little less. Its one of those cases where a little experimentation will likely be involved to find a balance appealing to you.
